I planing a trip to Canton fair from Canada.
Apr 12 YYZ(Toronto, Canada) -> CAN (Guangzhou) -> April 19 Train from Guangzhou East Railway -> Hong Kong [West Kowloon]-> April 22 YYZ(Toronto, Canada)
Will i be granted 240h visa? I am confused if I can exit Mainland by train. I didn't find way to book a ferry from Nansha Port or
Shekou Port; and airport tickets too expensive; train option to Hong Kong seemed to be great

Peter, under the condition that you arrive from Toronto to Guangzhou by a nonstop flight (assumption is that it could be CZ312 flight), you can take a train from Guangzhou (it can be Guangzhou East or South, whatever). This is definitely eligible and you will be able to enjoy 240 hour visa free transit in mainland China. It is important to use correct terminology because this is not a visa, but 240 hour visa free transit scheme, so there is no visa of any kind at all. It is also extremely important to buy your train ticket from Guangzhou to Hong Kong even before your departure from Canada. You will be asked to present one in both Toronto (at the time of your check-in) and in Guangzhou (upon your landing there). It is advisable to print out that train ticket booking confirmation to speed up the formalities related to this visa free transit scheme. Have a nice visit to China.
